You should check out the USS Renegade. Its not Nebula, its a fan conjecture of the New Orleans class. However, it is based in large part on the Nebual layout.
Another good thing to check would be the Enterprise Blueprints by Rick Sternback. They're extremely deatiled, and are considered canon, (unfortunatly they forgot all about the arboretum! Its just not there!)
The Nebula was a bastardization of the Galaxy class, much of the layout will be similar.
