I just saw Day of Honor and know exactly what you're talking about.
My guess is that what the billowing cloud of "smoke" was not coolant, but air reacting to the temperature change.
Multiple force fields are used to contain the warp field and it primary and secondary systems, the force field would be able to keep the coolant from truly leaking to mix with the cabin air, making it toxic, but the temperatures change and reaction would cause some visual effect.
Think of it as putting a blow torch to a pane of glass and then spritzing the other side of the glass with water. Poof.
